- ½ cup Paprika
- ¼ cup Cumin
- 1 tablespoon Fennel Powder
- 2 Tablespoons Fenugreek powder (optional)- gives sweetness
- 2 tablespoons Ground Mustard Powder
- 1 tablespoon ground Red Pepper Flakes (optional)- adds spiciness
- 3 tablespoons ground Coriander (optional)
- ¼ cup ground Turmeric root
- 1 tablespoon ground Cardamon (optional)
- 1 teaspoon Cinnamon Powder
- ½ teaspoon Cloves Powder (optional) - Adds complex flavor
- Mix all ingredients in a bowl, jar or food processor and store in an air-tight container until ready to use. Can be used on meats, vegetables or in soups. Especially good in with chicken, shrimp or vegetables.

- Mix well in bowl or jar and store in airtight container until use. Use about 1 teaspoon per chicken breast or steak when making fajitas. I use for making Fajitas and Fajita Salads.

Ingredients
- 1 tablespoon celery flakes
- 1 tablespoon kosher salt
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon ground thyme
- 2 teaspoons dried sage
- 1 1/2 teaspoons ground black pepper
- 1 1/2 teaspoons dried rosemary
- 1/2 teaspoon cayenne pepper
Directions
- Stir celery flakes, salt, paprika, garlic powder, onion powder, thyme, sage, black pepper, rosemary, and cayenne pepper together in a bowl. Transfer spice mixture to a spice grinder or food processor and blend until smooth.

Ingredients
- 1 -2 tablespoon lemon zest, about 3 lemons
- 2 -3 tablespoons black pepper
- 1 tablespoon sea salt
Directions
- Preheat toaster oven to lowest setting.
- In a large bowl, combine lemon zest and black pepper. Cover metal pan fitted for toaster oven with foil and spread mixture evenly in pan. Allow to bake low and slow until zest is completely dried. Mine took about 26-30 minutes.
- Transfer lemon-pepper mixture to a bowl. Using the back of a spoon (or spice grinder if you have one), crush mixture until desired texture is achieved. Mix in salt, 1 tsp at a time. Continue to add salt until you have the right balance to fit your taste.
- Notes.
- Depending on size of lemons, you may need more lemons.
- If you want more of a lemon taste, reduce pepper or add more lemon zest.
- Seasoning may be kept in an air tight container for a few months.
